Garlic Lemon Shrimp Grill


1 1/2 lbs. large peeled and deveined shrimp
4-6 fresh minced garlic
1/4 cup freshly squeezed lemon juice
1/4 cup olive oil
1/2 t. ground black pepper
4-6 lemon wedges


Combine the minced garlic, lemon juice, olive oil and pepper in a large bowl and stir. Gently add the shrimp and turn until coated evenly. Let the preparation marinate in the refrigerator for about 30 minutes. Pre-heat a grill or broiler. Drain shrimp from marinade sauce and let the excess drip off. Thread the shrimp onto skewers. Cook the skewers on a grill or in a broiler 3-4 inches from the flame until pink (about 2 minutes). Turn the skewers over, spread some reaining marinade over the shrimp and finish cooking until a consistant pink color shows through (2-3 minutes longer). Serve with fresh lemon wedges. Makes 4 servings.
