Poached Salmon

1 1/2 lbs. (4 pieces) skinless/boneless salmon fillet
2 T. nonfat plain yogurt or sour cream
1 T. mayonnaise
1 t. Dijon mustard
1/2 t. fresh ginger (minced or grated)
1/4 t. honey or sugar
fresh chives (minced) or parsley for garnish


Mix the yogurt, mayonnaise, mustard, ginger and honey in a small bowl. Set the sauce aside while the salmon cooks. Rinse the salmon. In a large pan, bring 2 inches of water to a boil. Place the salmon pieces into the boiling water and reduce the heat to a simmer. Simmer until the salmon is slightly translucent in the center (about 8-10 minutes for pieces 1″ thick, longer for thicker pieces). Gently remove the salmon from the pan. Drain and carefully pat the fish dry. Set the salmon on serving plate, spoon sauce over them, and garnish with minced chives or parsley. Makes 4 servings.
